  1. Peel one wide strip of lemon peel with a vegetable peeler, without the white part.

  2. With a grown-up: boiling water

    Put the rice, water, lemon peel, cinnamon stick and salt in a pot. Bring to the boil and simmer for 10 minutes, until the water is almost gone.

    Warm the milk, then add it to the rice a ladle at a time, stirring often, for about 25 minutes, until the rice is very soft and creamy.

  4. With a grown-up: hot pan

    Stir in the sugar for 2 more minutes, then take out the lemon peel and the cinnamon stick.

  5. Pour it into a wide dish and let it cool. It thickens as it cools.

Tips

Hot rice pudding spits and sticks to skin, so a grown-up stirs while it cooks. The cinnamon pattern is the best part for kids.
